Do not overhandle; cut into fancy shapes Uses of marzipan Marzipan is one of the most versatile of all sweets; it is the traditional coating of Christmas, wedding and rich fruit cakes under the icing. The amount given opposite will cover the top and sides of an 8-9inch cake, giving a fairly thin layer. Use any left over as a stuffing for stoned dates, to roll around nuts, etc. In England, one can buy marzipan bars (usually from Norway.)
