Preparation: 15 Minutes Cooking time: 15-20 Minutes Serves: 4 Ingredients: 4 chicken breasts « tsp. salt Dash black pepper 1 egg 2 Tbsp. prepared mustard ¬ cup parmesan cheese ¬ cup bread crumbs 2 Tbsp. oil 1 green pepper, seeded, sliced parsley sprig, for garnish Tips: Do not crowd pan when sauteeing chicken or it will steam, not brown, the meat.  For better flavor, use clarified butter for the chicken. This prevents burning and the formation of black specks on the skin surface. Preparation: 1. Wipe chicken breasts with damp paper towelling. Sprinkle with salt and black pepper. 2. In a bowl, beat together egg and mustard. In separate bowl, combine Parmesan cheese and bread crumbs, mixing well. 3. Dip each chicken breast in egg mixture. Then roll in cheese mixture until evenly coated. Lay chicken on waxed paper and allow coating to set for about 10 minutes. 4. Sautee chicken on both sides in heated oil for 15 to 20 minutes or until chicken is tender. Arrange on serving platter. Sprinkle with green pepper slices and garnish with parsley sprig. 5. Enjoy!
