     Turkey, I find, is often a good substitute.

     I myself like to brown up some ground turkey meat with chopped garlic
and scallions.  After draining it, I add a jar of salsa (usually med. or
hot), then pour it with a handful of shredded cheese over a pile of tortilla
chips.

     Voila!  Instant turkey nachos.

     Simple, quick, and my friends go crazy for them.
