=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 06-06-55 (01 19) Number: 390 From: CRITTER #104 @15490*3 Refer#: NONE To: ALL Recvd: YES Subj: Asparagus and Leek Soup Conf: (37) Home Cooki --------------------------------------------------------------------------- Asparagus and Leek soup 3/4 lb asparagus 1 1/2 ts veg oil 1 ts crushed garlic 1 c chopped onion 2 leeks sliced 3 1/2 c chicken stock 1 c diced peeled potato salt and pepper 2 tb grated parmesan Clean asparagus set tips aside In lg non-stick saucepan, heat oil, saute garlic, onion, leeks and asparagus  stalks unitl softened, approx 10 mins. Add stock and potato; reduce heat cover and simmer for 20-25 mins unitl  veggies are tender. Puree in a foodprocessor until smooth. Taste adjust seasoning, return to saucepan Staeam or micro asparagus tips until tender, add to soup. Serve sprinkled  with parmesan cheese. Critter
