=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 06-25-47 (52 19) Number: 389 From: MIKE HICKENLOOPER #55 @29 Refer#: NONE To: ALL Recvd: YES Subj: Fish & Veggies - Quick & Conf: (37) Home Cooki --------------------------------------------------------------------------- Having just discovered this sub, and capturing several interesting recipies, I offer a very simple and quick low fat dinner. filet of fish (whatever you like) - one or two per person 1 lb pkg frozen mixed vegetables (not thawed) 1/2 to 1 cup chicken or vegetable stock, defatted 10" or 12" frying pan, with lid Pour enough stock in pan to cover bottom 1/2". Heat at medium setting until stock is simmering. Add frozen veggies to pan (portioning to number of servings) and smooth to a level layer. Season with salt, pepper, and herbs that you enjoy (I like sage and basil). Add the filets to the pan and season to your preference. Cover pan and continue simmering, checking the fish after 10 minutes and frequently thereafter. 1/2" filets take about 20 minutes to just begin flaking, and they are then done. I tried this soon after my wife changed to lo/no fat food, and it turned out to be a favorite. Don't hesitate to try different herbs and spices, as the flavors seem to combine well.
