Pitted red sour cherries 1 cup sugar 1 cup sifted cake flour 1 teaspoon baking powder 1/4 teaspoon salt grated rind of 1 orange 1/3 cup milk 2 teaspoon butter, melted Put undrained cherries and 3/4 cup sugar in large deep skillet and bring to a boil. Mix and sift 1/4 cup sugar, the flour.baking powder. and the salt into a bowl. Add remaining ingredients and mix lightly. Drop by tablespoons full into boiling mixture, making four to six dumplings. Cover and cook gently for 20 minutes. Serve warm. Deep dish Cherry Pie with Shortcake crust 1 can (1lb.) pitted sour cherries. 3/4 cup plus 2 tblspoons sugar. 2 tablspoons all-purpose flour. dash of salt 1 tablspoon fresh lemon juice 1 tablspoon butter 1 cup prepared biscuit mix 1/4 cup milk Drain cherries and reserve liquid. combine 3/4 cup sugar and flour and salt. Gradually stir in cherry juice. Cook over low heat until thickened, stirring constantly. Cool slightly. Stir in lemon juice, butter, and cherries; pour into 1 quart casserole. Combine biscuit mix and 2 tablesppons sugar. add milk and beat well. Spoon batter over cherries. Bake in preheated moderate oven (400 f) for 20 to 25 minutes or until brown. makes 4 servings. ---
