=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 07-01-35 (16 19) Number: 404 From: LANCE HALLE #1 @6211*2 Refer#: NONE To: ALL Recvd: YES Subj: Dutch Oven Enchiladas Conf: (37) Home Cooki --------------------------------------------------------------------------- DUTCH OVEN GREEN BEEF ENCHILADAS 1 lb ground beef 8 - 10 corn tortillas 2 - 3 Tbl. salsa 3/4 lg can green enchilada sauce 2 - 3 cups grated cheese 2 Tsp. black pepper 1/2 Tsp. ea garlic & onion salt 1/4 cup chopped onions In a hot dutch oven, brown together ground beef, pep- per, onions, garlic and onion salt. When brown, prop one side of oven up so grease gathers in one spot. Lightly fry tortillas in this grease, one at a time. Drain off any ex- cess grease when the tortillas are done. Lay out tortillas one at a time in oven, add meat and sprinkle on cheese. Add about 1 Tbl. green sauce and roll up. Do this with each tor- tilla. Pour the rest of the green sauce and the remaining cheese over the enchiladas. Cook covered, over 12 to 15 charcoals for 15 to 20 minutes until bubbling. Serves 4.
