Being of an Arabic ancestry I have been curious about what recipes have been

used for the lowly lentil.  I like making up some dishes with lentils but am

curious to see if anyone else has a favorite one using lentils.

One that I like doing is taking a 1 and 1/2 quart pot filled with a 16oz

package of dried lentils.  Start the pot boiling and add 2 good size onions

diced up, toss in about 3 or 4 beef boillion cubes for flavor.  This should be

allowed to come to a boil and then taken down to a simmer for a couple of

hours.  If you like add in 3 diced carrots to the simmering pot.  Make sure

that you keep the water at the starting level.  Lentils will absorb a bunch of

the water.  About a half hour before serving you can add in ham or a couple of

sliced up polish sausage for the meat.  Or if you prefer some diced roast beef.

This can serve as a nice respite from the every day chicken noodle soup and

vary the taste buds.  It is great served with some buttered pita bread that has

been halved, butter and heated in the oven til the butter starts to melt.
