(For thinner mixture, add more milk.) Let stand for 5 minutes. Pour batter (about 1/4 cup) onto heated griddle to make a 4-inch pancake. Cook until top of paancake is bubbly and edges are dry. Flip pancake over and cook until golden, about 3-4 minutes. Make additional pancakes until all batter is used. Top each pancake with papaya-apricot syrup or fresh fruit. Makes 10-12 pancakes. Per serving (with 2 tablespoons fruit syrup): 138 calories, 4 grams protein, 5 grams fat, 18 grams carbohydrates, 225 milligrams sodium, 23 milligrams cholesterol. Pancake Mix In a mixing bowl combine 10 cups all-purpose flour, 2 1/2 cups instant nonfat dry milk, 1/2 cup granulated sugar, 1/4 cup baking powder and 2 tablespoons salt. Stir together to blend well. Place in a large container, store in a cool dry place for up to 8 months. Makes 13 cups. Papaya-Apricot Syrup In a saucepan, place 1 1/2 ounces of papaya nectar and juice of 1 (16 oz.) can water-packed apricots, reserving apricots. Dissolve 3 tablespoons cornstarch in 2 tablespoons water, stir into juice mixture. Stirring constantly, bring to a boil over medium heat until thickened.
