As far as I know, you can't use a breadmaker for traditional zucchini bread because breadmakers are designed to be used with YEAST breads. I too have lots of zucchini in my garden and LOVE zucchini bread. But my favorite is Pineapple Zucchini Bread...... and here it is! Ingredients: 3 eggs 2 cups sugar 1 cup oil 2 tsps vanilla 2 c shredded zucchini 1 (8 1/4 oz) can crushed pinapple (drained) 3 cups flour 2 tsp baking soda 1 tsp salt 1/2 tsp baking powder 1 1/2 tsp ground cinnamon 3/4 tsp ground nutmeg 1 cup finely chopped walnuts (optional) Directions: Preheat oven to 350 degrees. Lightly grease two 9 x 5 inch loaf pans. In a bowl, beat eggs with an electric beater until frothy; beat in sugar, oil and vanilla and continue beating until mixture is thick and foamy. Stir in succhini and pineapple. In another bowl, stir together flour, baking soda, salt, baking powder, cinnamon, nutmeg and nuts; add to zucchini mixture and stir just until all flour is moistened. Pour into prepared pans. Bake 50 to 60 minutes or until done throughout. It's EXCELLENT!!! ...
