I found a GREAT recipe to other day, right on the side of my  cereal box! It's for Apple filled Snickerdoodles. Here goes! 1/2 cup (1 stick) margarine, or softened butter 1/2 cup plus 3 tabl spoons sugar, DIVIDED 1/2 cup packed brown sugar 1 egg 1 1/4 cups all-purpose flour 1/2 tsp baking soda 3 cups of Apple Cinamon Cheerio's, crushed to 1 1/4 cups 1 tsp ground Cinamon 1/3 cup apple butter, or applesauce Preheat oven to 350 degrees. Lightly grease a cookie sheet. In a large bowl cream margarine, 1/2 cup sugar, and brown sugar. Add egg; mix well. Stir in  flour and baking soda. Add cereal, stirring until well combined. In a small  bowl combine cinamon, and remaining 3 tbl spoons of sugar. For each cookie,  roll 1 level tbl spoon dough into a ball. Roll the ball in cinamon and sugar  mixture and place it on the cookie sheet. Press your thumb into the center of  each ball to form a pocket. Spoon 1/2 tsp of apple butter or applesauce into  the center of each cookie. Bake each tray for 10 to 12 minutes or until  lightly browned. Let stand 1 minute, before removing the cookies from the  cookie sheet. Makes 2 1/2 dozen cookies. I just made 2 batches of these on Friday, and they were sooooo good, the  rest of the family ate 'em all by Sunday! So, go ahed and give them a try, and  let me know what ya think!
