=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 08-08-93 (19:15) Number: 370 From: DAPPY #10 @1618002*1 Refer#: NONE To: ALL Recvd: YES Subj: Stir-Fry Chicken Chunk 'N Conf: (37) Home Cooki --------------------------------------------------------------------------- Stir-Fry Chicken Chunks 'N' Noodles (Maureen McClanahan) Salt Freshly ground black pepper Garlic powder (see note) Onion powder (see note) 2 teaspoons margarine 8 ounces mini-lasagna or other noodles, uncooked 2 tablespoons vegetable oil or margarine, or more as needed 10-12 skinless, boneless chicken breast tenders, cut into chunks In 6-quart pot, bring 4 quarts water, 1/8 teaspoon salt, 1/4 teaspoon pepper, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, and 2 teaspoons margarine to a rolling boil. Add noodles. Boil 12 to 15 minutes, r until done. Drain; rinse with cool tap water. Set aside. Heat oil in 12-inch skillet over medium-high heat. Add chicken. Sprinkle with salt, pepper, garlic powder and onion powder to taste. Stir-fry chicken about 15 minutes, or until it is cooked through and a light crust forms on the outside. Add noodles; stri-fry 10 minutes, or until hot and somewhat crispy on the edges (add more oil or margarine as needed, so noodles don't dry out). Yield: 4 to 6 servings. Note: 1 clove garlic, minced, and 1 small white onion, cut into thin slices, can be substituted for the garlic and onion seasoning in the stir-fry.
