Well, I don't live in Pennsylvania, but I *do* have a Pennsylvania Dutch Shoo-Fly Pie recipe :) MMMMM----- Recipe via Meal-Master (tm) v7.07 Title: Authentic Pennsylvania Dutch Shoo Fly Pie Categories: Pies, Desserts Servings: 8 1/2 c Baking Molasses 1/2 ts Baking Soda 3/4 c Flour 2 tb Butter 1/8 ts Ground Ginger 1/2 ts Cinnamon 1 ea Pastry for 9 inch pie 1 ea Egg Yolk 3/4 c Boiling Water 1/2 c Brown Sugar 1/8 ts Nutmeg 1/8 ts Ground Cloves 1/4 ts Salt Dissolve soda in boiling water and add to egg and molasses. Set aside. Stir dry ingredients together, mixing well. Cut in shortening until mixture looks like coarse crumbs. Pour molasses into pie shell. Sprinkle crumbs evenly over top. Do not stir. Bake at 450 degrees for 15 minutes then reduce heat to 350 degrees and bake 20 minutes longer. Cool and serve. MMMMM And here's another Pennsylvania Dutch recipe, for good measure. :) MMMMM----- Recipe via Meal-Master (tm) v7.07 Title: Schnitz Pie Categories: Pies, Desserts Servings: 1 1 lb Sour schnitz, dried ** 2 tb Cinnamon 1 qt Water, cold 1 ea Orange, rind & juice of 2 c Sugar 1 x *pastry ** Schnitz is the Berks County Dutch name for one fourth of an apple. Put the schnitz and the water into a saucepan and cook to a soft pulp. Add cinnamon, sugar, orange juice and orange rind, and mix well together. Stand aside to cool. Line a pie pan with pastry, fill with the schnitz, and cover top with pastry. Bake at 450-F for 10 minutes. Reduce heat to 350-F and continue baking for 30 minutes.
