                         Jelly Center Cookies

Ingredients:

                 1 lb. butter             4 egg yolks
                 1 c. brown sugar         1 t. vanilla
                 1 box Swansdown cake     4 egg whites unbeaten
                   flour (2 lb. size)     1 lb. nuts chopped fine
Jelly or preserves or cherries, etc.

     Combine butter, egg yolks, brown sugar and vanilla and beat well. Add c
flour and form into balls size of large walnut. Dip in egg whites and roll in

nuts. Place on sheet and bake 5 minutes in 350 degree oven. Remove and press

thumb in center of each. Return to oven and bake 20 minutes more. Fill center

with desired jelly or jam. Makes 90 cookies.
