in defference..... the term for french fries in france is Pommes frits I 

believe as this is derived from the term for potatoes in france which is 

Pommes de terre which means apples of the earth....the best fries are made 

from potatoes that have been par boiled ...in water or oil(best)....then 

cooled and deep fried.... an unusual variation is pommes de terre souffle...in 

which you cut the potatoes thinly(like a thick potato chip) then par fry in 

not too hot oil...let cool then refry in hot oil....then watch what happens as 

the potatoes should puff....mmm.....I got hundreds of potato recipes...
