       Cranberry Cake
 3 eggs or 3/4 cup egg substitute   1 cup flour
 1 1/2 cup granulated sugar         1/2 cup chopped pecans
 1/4 tsp salt                       2 cups uncooked, washed, whole
 1/2 cup margarine                  cranberries
 1/4 cup oil                        powdered sugar

    With mixer cream together margarine,oil,and sugar until light and
    fluffy. Add eggs and beat well. Add flour and salt a little at a
    time and mix thoroughly with mixer on medium speed. Stir in nuts
    and cranberries by hand. Bake in greased pan (form pan or 8x11 inch
    rectangular) at 300 degrees for one hour. Remove from oven and
    sprinkle with powdered sugar while still hot. Yields 24 (2x2"
    servings.
