Place chicken in roasting pan. Insert meat thermometer between breast and thigh, in the thick part of the meat. Melt butter and drizzle over chicken. Sprinkle with salt, pepper and chili pwoder to taste. Bake at 325 degrees for 1 hour then cover and bake until meat thermometer reads 180 to 185 degrees. Easy!
