=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 12-13-93 (22:32) Number: 360 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: Giant Empanada Conf: (37) Home Cooki --------------------------------------------------------------------------- RECIPE NAME: GIANT EMPANADAS KEY INGREDIENTS: beef, tomatoes, pie shells SOURCE: Try out these meat pies whenever your family has a desire for that yummy Mexican fiesta taste. 1 lb. ground beef 1 cup chopped onion 1 cup chopped green pepper 14 1/2 oz. can whole tomatoes with liquid, cut up 1 tbsp. chili powder 1 tsp. ground cumin 1/2 tsp. salt 1/2 tsp. pepper 2 unbaked pie pastries (9" each) 1 egg yolk 1 tbsp. water Sour cream chopped fresh tomatoes shredded cheese shredded lettuce In a skillet, brown the beef with onion and green pepper, drain. Stir in tomatoes and seasonings. Simmer, uncovered, for 15 minutes, stirring occasionally. Place pie pastries on a baking sheet. Divide filling and spoon half of the filling on one half of each pastry, spreading to within 1 inch of the edges. Fold other half of pastry over filling and press edges to seal. Beat egg yolk with water, brush over pastries. Bake at 400 degrees for about 20 minutes or until golden. Cut into wedges to serve. Garnish with sour cream, tomatoes, cheese and lettuce.
