=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 12-19-93 (19:55) Number: 386 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: Fried Ham & Egg Salad On Conf: (37) Home Cooki --------------------------------------------------------------------------- RECIPE NAME: FRIED HAM AND EGG SALAD ON RYE KEY INGREDIENTS: eggs, ham, rye bread SOURCE: Makes 4-5 sandwiches 5 hard-boiled eggs, chopped 2 ribs celery, finely chopped 1 1/2 Tbsp. canned, grated Parmesan cheese 1 tsp. prepared brown mustard 1/3 cup mayonnaise 1/8 tsp. salt 1/8 tsp. pepper 2 Tbsp. butter/margarine 2/3 lb. thinly sliced ham, cut into 1" strips 4 scallions, thinly sliced (include a little green) 1 Tbsp. brown sugar 8-10 slices Jewish rye bread (with caraway seeds) Make egg salad: In a medium bowl, combine eggs, celery, cheese, mustard, mayonnaise, salt and pepper. In a medium skillet, melt butter. Add ham strips and fry over medium heat until lightly browned on both sides. Add scallions to pan and cook 1 minute more. Sprinkle ham mixture with brown sugar, toss until coated and sugar is melted. Spread egg salad on rye bread, top with grilled ham, put the top on and enjoy an egg salad sandwich with a twist.
