=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 12-25-93 (21:33) Number: 401 From: R2D2 #3 @1614017*1 Refer#: NONE To: ALL #1 @1614017*1 Recvd: NO Subj: Fried Grits Conf: (37) Home Cooki --------------------------------------------------------------------------- Fried Grits ___________ No. of Servings: 8 Ingredients: 4 C. water 1/2 C. packaged seasoned bread crumbs 1-1/2 C. milk 1 t. parsley flakes 1/4 C. butter 3 large eggs 1 t. salt 1/4 C milk 2 C. grits 1/4 C. oil 1-1/2 C. unsifted all purpose flour In a large saucepan, combine 2-1/2 cups of water, the milk, butter, sugar, and salt and bring to a boil. In a small bowl, combine the grits mixture into the boiling milk mixture. Cook stiring constantly, until thick and bubly. Cover and cook over low heat for 5 minutes. Pour grits into a greased 9x5-inch loaf pan. Cool to room temperature. Cover tightly and refrigerate until firm, several hours or overnight. In a large bowl combine the flour, bread crumbs and parsley. In a seperate bowl beat the eggs and milk. Unmold the grits loaf and cut into 16 slices. In a large, deep skillet, heat the oil over high heat. Dip the grit slices into the flour mixture, then in the egg mixture, then the flour mixture again.
