=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 12-19-93 (19:57) Number: 388 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: Leftover Meatloaf Sandwic Conf: (37) Home Cooki --------------------------------------------------------------------------- RECIPE NAME: LEFTOVER MEATLOAF SANDWICHES KEY INGREDIENTS: ground round, ground pork, SOURCE: Makes 6 sandwiches. 1 1/4 lb. ground beef round 1/4 lb. ground pork 1/2 green bell pepper, finely chopped 1 small onion, finely chopped 1/2 cup oatmeal (uncooked) 1 egg 1 tsp. salt 1/4 tsp. pepper 1/4 tsp. cayenne pepper 2 to 3 hard boiled eggs 2 Tbsp. tomato paste 3 to 4 slices Swiss cheese Fresh Italian bread, unsliced Preheat oven to 375 degrees. In a large bowl, mix first 9 ingredients (stop after the cayenne pepper). Spread meat mixture evenly in a loaf pan. Form a gully lengthwise down the center and bury the hard-boiled eggs. Bake 50 minutes. Remove from oven and spread tomato paste on top followed by cheese slices. Return to oven and bake 20 to 25 minutes more until no longer pink inside. When slightly cooled, cut off one end and taste. Consider the rest leftovers and make yourself a big sandwich.
