=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 12-19-93 (20:04) Number: 395 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: Sour Cherry-Banana-Chocol Conf: (37) Home Cooki --------------------------------------------------------------------------- RECIPE NAME: SOUR CHERRY-BANANA-CHOCOLATE CHIP CRISP KEY INGREDIENTS: cherries, bananas, oatmeal, SOURCE: Serves 9 2 cans (16 oz.) pitted tart cherries in water 1 cup sugar, divided 1/2 cup cornstarch 1/8 tsp. salt 1/2 tsp. vanilla extract 2 bananas, sliced into rounds 1/2 cup firmly packed brown sugar 3/4 cup flour 1/2 cup (1 stick) cold sweet butter, cut into chunks 3/4 cup quick cooking (not instant) oats 3/4 cup semi-sweet chocolate chips vanilla bean ice cream Preheat oven to 375 degrees. Drain cherries, reserving 1 cup juice. In a large saucepan, combine 3/4 cup of the sugar, cornstarch and salt. Slowly whisk in reserved juice. Cook over medium low heat, stirring constantly, until thickened. Remove from heat and stir in cherries, vanilla extract, bananas and remaining 1/4 cup sugar. Spoon into a 9 by 9 inch square pan. In a medium bowl, combine brown sugar, flour and oatmeal. With fingers, work butter in until it resembles coarse meal. Stir in chocolate chips. Sprinkle over cherry mixture. Bake 40 minutes or until top is golden brown. serve warm (not hot) with a scoop of vanilla bean ice cream. Note: This can be assembled ahead of time up to the baking point and refrigerated until later. Don't make it too much later, though, because bananas can turn kind of funny after awhile.
