I had some in a cafe in > Santa Cruz one time which was really excellent. I don't have one for vegetarian Corn chili, but I do have a low-cal, low-fat, low-sodium (but still very tasty) vegetarian chili soup. 1 can stewed tomatoes 1 can kidney beans (washed and drained) 1/4 lb fresh sliced mushrooms 1 medium onion coarsely chopped 1 clove garlic minced 1 small green pepper (seeded & chopped) 2 tbsp chili powder 2 tbsp vegetable oil Heat oil in a large stockpot. Add garlic and chopped onion. Stir and sautee until onion is transparent and tender. Add chili powder, mushrooms, green pepper, (and anything else that is getting limp in your crisper), and the stewed tomatoes (including juice). When the mixture is warm, add the beans and enough water to make the amount of broth you want. Cover and cook for two hours at a simmer, stirring occasionally. Salt and pepper to taste. It makes as much as you want (very easy to stretch with extra veggies and tomatoes) and is about 75 calories a cup.
