=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 01-14-94 (11:56) Number: 328 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: Black Bean Soup And Rice Conf: (37) Home Cooki --------------------------------------------------------------------------- Black Bean Soup And Rice 1 1/2 c. black beans, soaked overnight 1 onion, chopped 1/2 green pepper, chopped 2 stalks celery, chopped 1 carrot, chopped 3-4 cloves garlic, peel & mince Salt and pepper to taste 1/4 c. orange juice healthy dash hot sauce 1 lb. bacon, chopped 1 c. smoked ham, chopped olive oil 4 c. chicken stock 1 T. chili powder 1 T. cumin 2 t. coriander 2 bay leaves 1 T. oregano 1 pkg. Uncle Ben's Wild rice, cook according to directions Sour cream 1 c. Cheddar cheese, grated Drain the beans and rinse. Cover the bottom of a large soup pot with olive oil. Saute' the carrot, celery, garlic, green pepper and onion. In a small skillet, cook bacon. drain, add to soup pot with beans, ham, 1 cup water, orange juice, salt, pepper, hot sauce and herbs. Simmer about 3 hours. Remove from heat (and using a slotted spoon) place about three heaping spoons of the soup in a processor or blender. Add a little liquid and puree. Return to soup and reheat. To serve, pour over rice and top with cheese and sour cream. This is also good made with leftover chicken and or pork.
