=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 01-14-94 (11:54) Number: 326 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: Boiled Crabs Conf: (37) Home Cooki --------------------------------------------------------------------------- Boiled Crabs 4 onions, quartered 2 heads garlic, cut in half cross ways 4 ribs celery with leaves, coarse chopped 2 packets crab boil spices or one 8 oz. bottle liquid crab boil 1/2 of a 26 oz. box salt 2 oz. crushed red pepper 2-2 oz. cans black pepper 2-2 oz. cans cayenne pepper 2-2 oz. cans garlic powder leaves 4 large lemons, thickly sliced 1 lb. good quality smoked sausage 18 hard shell crabs 18 small red potatoes 6 large ears of corn, cut in half Fill a 20 quart stockpot a little more than halfway with water. Add onions, garlic, celery, crab boil, salt, peppers, garlic powder, bay leaves, lemon and sausage. Bring to a boil and cook for 5 to 10 minutes. Drop live crabs into the mixture and boil for 20 minutes. Add potatoes to the pot with the crabs, add corn after the crabs and potatoes have cooked for 10 minutes. After the crabs and vegetables have cooked for 20 minutes, turn off heat and allow to soak in seasoned water for 5 to 10 minutes. Using tongs or a wire basket, remove the crabs, corn, potatoes and sausage from the water and serve. Boiling water can be doctored with more salt and spices (if needed) and used again for another batch of crabs. Makes 4 to 6 servings.
