      Title: Carrot Relish
 Categories: Vegetables
   Servings:  8

      2 tb Butter                              1 c  Raisins
      2 c  Shredded carrots                    1 c  Walnuts
    1/2 c  Shredded onion                      2 tb Cider vinegar
      1 c  Chopped apple, unpeeled             1 ts Sugar

  Saute carrots, onion and apple in butter until crisp-tender, about 3-5
  minutes.  Mix in raisins, walnuts, vinegar and sugar and toss.
  Refrigerate until chilled and serve.
