Combine onion, celery and apples. Brown lightly. Add seasonings and cook for 5 minutes. Add 4 cups chicken stock and cook slowly for 20 minutes. Thicken with flour, stirring gently. Add chicken and let stand for 3 hours. Add egg yolks and cream and heat. Serve over rice with your choice of the other ingredients.
