Chicken Parmesan
1 egg
2 lbs. boneless chicken pieces
1/2 C bread crumbs
2 tbsp. shortening
shredded mozzarella cheese
1 can tomato soup
1/4 C water
1/4 C chopped onion
dash garlic powder
sprinkle oregano

Beat egg and 1 tablespoon water.  Roll chicken in egg mixture, then bread
crumbs.  In skillet, brown chicken in shortening.  (pour off fat.)  Stir in
soup, 1/4 C water, onion and seasonings - add sprinkle of parmesan cheese.
Cover;  cook on low heat 45 minutes.  Sprinkle each piece with mozzarella
cheese.  Heat till cheese melts.
