=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 01-22-94 (17:07) Number: 396 From: ANGELA #142 @1614017*1 Refer#: NONE To: ALL Recvd: NO Subj: Chocolate Mousse Bars Conf: (37) Home Cooki --------------------------------------------------------------------------- Chocolate Mousse Bars For a chocolate extravaganza, use chocolate wafers, instead of vanilla, for the crust of these creamy bars. 1 1/2 C vanilla wafer crumbs (about 40 wafers) 1/4 C (1/2 stick) margarine or butter, melted 3/4 C whipping (heavy) cream 1 package (6 ounces) semisweet chocolate chips (1 cup) 3 eggs 1/3 C sugar 1/8 tsp. salt Chocolate Topping (below) Heat oven to 350 degrees. Mix wafer crumbs and margarine. Press in ungreased square pan, 8 x 8 x 2, or 9 x 9 x 2 inches. Bake 10 minutes. Heat whipping cream and chocolate chips over low heat, stirring frequently, until chocolate is melted; remove from heat. Cool about 5 minutes. Beat eggs, sugar and salt in large bowl until foamy. Pour chocolate mixture into egg mixture, stirring constantly. Pour over baked layer in pan. Bake 25 to 35 minutes or until center springs back when touched lightly. Cool 15 minutes. Spread with Chocolate Topping. Refrigerate uncovered about 2 hours or until chilled. Refrigerate any remaining bars. 16 bars. CHOCOLATE TOPPING: 1/2 C semisweet chocolate chips 1 tbsp. shortening Heat ingredients over low heat, stirring frequently, until melted.
