=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 01-05-94 (22:07) Number: 336 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: Collard Greens Soup Conf: (37) Home Cooki --------------------------------------------------------------------------- COLLARD GREENS SOUP 3-4 lb. center cut ham with bone, cut in chunks 1 beef soup bone 4 med. onions, diced 6 celery stalks, diced 8 Chorizo (Spanish) sausages, sliced 1 bay leaf 1/2 t. hot pepper sauce 1/2 t. thyme 1/2 t. red pepper 1 t. oregano 4 T. worcestershire 1 gallon water 2 1/2 c. fine chopped collards 2 lb. dried lima beans, soaked 8 hours 3 potatoes, grated Salt/pepper to taste In stock pot, cook ham, ham bone, soup bone, onions, celery, sausage and seasonings in water. Simmer 2 hours. Add collard greens and soaked beans. Simmer 2 more hours. Add potatoes last 30 minutes to thicken. Salt and pepper to taste. Makes 8 to 10 servings. NOTE: You can add diced green pepper or substitute canned garbanzo beans for dried beans. Substitute pepperoni or Polish sausage for the chorizo if desired.
