=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 01-05-94 (22:10) Number: 343 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: Cornbread Salad Conf: (37) Home Cooki --------------------------------------------------------------------------- CORNBREAD SALAD 8 1/2 oz. pkg. cornbread mix 1 egg 1/3 c. milk 4 med. tomatoes, peel & chop 1 green pepper, chopped 1 medium onion, chopped 1/2 c. sweet pickles, chopped 9 slices bacon, cook and crumble 1/4 c. mayonnaise mixed with 1/3 c. pickle juice To make the cornbread, combine all ingredients and stir well. Put in a 8 inch greased pan. Bake at 400 degrees in the oven for 15 to 20 minutes. Cool and crumble and set aside. Assemble the salad by tossing the vegetables together gently and setting them aside. Layer 1/2 of the crumb mixture, 1/2 of the tomato mixture and 1/2 of the mayonnaise mixture. Repeat. Let sit at least 2 hours before serving. Keep refrigerated.
