=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 01-05-94 (22:07) Number: 337 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: Double Cheese Topped Onio Conf: (37) Home Cooki --------------------------------------------------------------------------- DOUBLE CHEESE TOPPED ONION SOUP 4 large onions, thinly sliced and separated into rings 1/2 c. butter 1 T. flour 2 c. chicken broth 10 3/4 oz. can beef broth 1 c. water 1/4 c. dry white wine 3/4 t. salt 1/8 to 1/4 t. pepper onion and garlic flavored croutons 6 oz. pkg. mozzarella cheese slices, cut into halves 1/2 c. parmesan cheese Saute' onions in butter in a Dutch oven over medium heat until tender. Add flour, mix well. Stir in chicken broth, beef broth, water and wine. Bring to a boil, reduce heat. Simmer for 15 minutes. Add salt and pepper. Ladle soup into 8 baking dishes. Top each with 6-8 croutons and cheese slice. Sprinkle with Parmesan cheese. Bake for 10 minutes or until the cheese melts.
