=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 01-14-94 (12:34) Number: 376 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: Honey-Lime Sauced Grilled Conf: (37) Home Cooki --------------------------------------------------------------------------- Honey-Lime Sauced Grilled Chicken 6 chicken breast halves 1/2 c. oil 1/2 c. lime juice 1 t. soy sauce 1/2 t. salt 2 t. chopped fresh parsley 1/2 t. fresh ground black pepper 3 cloves garlic, minced Sauce: 1/2 c. minced onion 1 T. olive oil 1 c. dry white wine 1/4 c. honey 1/4 c. lime juice 2 t. dry mustard 1 t. fresh rosemary, minced 1/2 t. salt\dash pepper 1 t. cornstarch 1 t. water Place breast halves in a large bowl or baking dish. Combine oil, lime juice, soy sauce, salt, parsley, pepper and garlic. Pour over chicken breast halves, coating well and refrigerate for 6 hours or overnight. For the sauce, saute the onion in olive oil until translucent. Add wine, honey, lime juice, mustard, rosemary, salt and pepper. Bring mixture to a boil. Combine cornstarch and water. Mix well and add to the sauce. Cook and stir until the sauce thickens. Prepare coals for grilling. Remove chicken from refrigerator and grill over medium heat, turning occasionally, until cooked through. This should take about 25 to 30 minutes. Serve with honey-lime sauce.
