                      MONTE CRISTO POTATOES

4 large baking potatoes, baked      1/4 c. chopped onion
1/4 c. chopped celery               1/2 c. chopped ham
1/2 c. chopped turkey               1/2 c. chopped chicken
1/2 c. shredded Cheddar             1/2 c. sour cream
1/2 t. paprika

Split potatoes.  Lightly fluff the inside of the potatoes with a
fork.  Sprinkle 1 Tbsp. onion, 1 Tbsp. celery, 2 Tbsp. ham, 2
Tbsp. turkey, 2 Tbsp. chicken, 2 Tbsp. cheese and 1 Tbsp. sour
cream in each potato.  Heat under a broiler for 1 to 2 minutes to
melt the cheese.  Sprinkle with paprika and serve.  Makes 4
servings.
