Here are a couple of recipes I've used over and over. Good luck! Mock Sour Cream 1/4 cup buttermilk or yogurt (1% or less fat, by weight) 1 cup cottage cheese (1% or less fat, by weight) 1/2 teaspoon lemon juice or vinegar (if using buttermilk) Pour buttermilk or yogurt into blender and add the cheese. Blend and stir to mix well. Blend well. Blend in the lemon juice or vinegar if using buttermilk. Makes about 1 cup. Bean Enchiladas 3 cups cooked pinto beans, drained 1 large onion 1/2 cup canned green chili salsa 1/4 cup canned diced chiles 1 tablespoon chili powder 1 teaspoon each: onion powder, garlic powder, cumin 12 corn tortillas (lower in fat than flour tortillas) Sauce: 1 15 oz can tomatoe sauce mixed with 1 tablespoon chile powder Mash or blend( in blender) beans and set aside. In small skillet, saute in water, or dry-saute (stirring constantly) onions together with the seasonings until the onions are soft. Combine the beans and seasoned onions, mixing well. Heat tortillas in 350 oven until softened. Remove from oven and fill each with bean mixture and roll up. Place seam-side down in a nonstick baking pan and cover with sauce. Bake uncovered for 10 - 15 minutes.
