If you use frozen peas, don't cook them before adding to the rice. Let them defrost at room temperature. Or just put the peas in a strainer and run under hot water. 3 tbsp. olive oil 1 medium-sized onion, cut into 1/4-inch dice 1 tbsp. finely chopped garlic 2 C long-grain rice 1 can (28 oz) peeled plum tomatoes, drained and crushed 4 C vegetable broth or defatted chicken broth Salt and freshly ground black pepper, to taste 10 oz frozen green peas, defrosted 1/2 C coarsely chopped flat-leaf parsley 1.
