=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 01-14-94 (12:38) Number: 384 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: Southern Style Sweet & So Conf: (37) Home Cooki --------------------------------------------------------------------------- Southern Style Sweet And Sour Chicken 1/4 c. brown sugar, packed 2 T. cornstarch 1/2 t. salt 3/4 c. pineapple juice or liquid drained from canned pineapple 1/4 c. vinegar 1 T. soy sauce 3 c. chicken, cooked, cut into pieces 1/4 c. onion, thin half slices 1 c. pineapple chunks, drained 1/2 c. celery strips, very thin 1 inch long 1/2 c. green pepper rings, thin, quartered 2 T. pimiento, diced 3 oz. can chow mein noodles 1/4 c. almonds, slivered and toasted Combine brown sugar, cornstarch and salt. Stir into pineapple liquid. Addd vinegar and soy sauce. Bring to a boil over high heat. Reduce heat and cook until thick, stirring constantly. Remove from heat. Add chicken, onion, pineapple, celery and green pepper. Cook 5 minutes. Add pimiento and cook 1 minute longer. Serve over chow mein noodles. Top with almonds. Makes 4-6 servings. Note:I like to serve this with fried rice too....
