=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 01-05-94 (22:09) Number: 341 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: Southwestern Chip Salad Conf: (37) Home Cooki --------------------------------------------------------------------------- SOUTHWESTERN CHIP SALAD 1 lb. lean ground beef 1 pkg. taco seasoning mix 2/3 c. water 15 1/2 oz. can kidney beans, drained 1 small head lettuce, torn into bite sized pieces 8 oz. spinach, torn in bite sized pieces 4 tomatoes, cut into eighths 1 large onion, chopped 1 avocado, peel & thin slice 8 c. potato chips 1 c. shredded Cheddar cheese 1/2 c. mayonnaise/salad dressing 1/4 c. chili sauce 1 t. pickle relish, drained Cook ground beef in 12 inch skillet, stirring occasionally, until brown, drain. Stir in seasoning mix, water and kidney beans. heat to boiling, reduce heat. Simmer uncovered 15 minutes, stirring occasionally. Mix lettuce, spinach, tomatoes, onion, avocado, potato chips and cheese in a large salad bowl. Mix mayonnaise, chili sauce and relish. Toss with lettuce mixture. Pour warm beef mixture over salad. Toss and serve immediately. Makes 8 servings.
