=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 01-16-94 (18:48) Number: 366 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: Tequila-Lime Fajitas Conf: (37) Home Cooki --------------------------------------------------------------------------- ---------- Recipe via Meal-Master (tm) v7.07 Title: Tequila-Lime Fajitas Categories: Beef, Meats, Mexican Servings: 3 1/2 c Lime juice 1/2 ts Bottled hot pepper sauce 1/4 c Cooking oil 1/4 ts Salt 1/4 c Tequila 1 md Onion, thinly sliced 4 oz Can chopped green chili 3/4 lb Boneless beef skirt steak Peppers, drained 6 ea 8" flour or corn tortillas Make marinade: In a 2 cup measure, combine lime juice, tequila, oil, chili peppers, hot pepper sauce and salt. Add onion. Place steak in a shallow dish. Pour marinade over steak. Cover and marinate steak in the refrigerator overnight, turning it several times. Remove steak from marinade, reserving the marinade. Pat steak dry with paper towels. With a slotted spoon, remove onion and chili peppers from marinade. Wrap in foil. stack tortillas and wrap in another piece of foil. Grill the wrapped onions and chili pepper and the steak directly over medium coals for 9 minutes. Add wrapped tortillas to grill. Turn steak and continue grilling to desired doneness, allowing 9 to 11 minutes for medium doneness. Brush steak with reserved marinade during grilling. To serve: Slice steak thinly on the ibas into bite-sized pieces. Place a few steak strips, onions and chili peppers on each tortilla. Top with avocado slices and sour cream, if desired.
