Add the chicken, stir to coat, and let stand for 30 minutes. Combine the sauce ingredients in a small bowl and stir to dissolve the sugar. Heat a wok over high heat until hot. Add the oil and ginger and cook for 10 seconds. Add the chicken and orange, lemon, and lime peels and stir-fry for 2 minutes. Add the sauce, reduce the heat to medium-low and simmer until the chicken is opaque, about 3 minutes.
