=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 01-05-94 (22:09) Number: 342 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: Turkey Club Salad Conf: (37) Home Cooki --------------------------------------------------------------------------- TURKEY CLUB SALAD DRESSING: 1 cup mayonnaise 2 T. frozen orange juice concentrate, thawed SALAD: 1 avocado 2 T. orange juice 8 c. torn iceberg lettuce (about 1 medium sized head) 2 oranges, peeled, seeded, cut into slices and halved 1 lb. smoked turkey, cubed 8 oz. shredded Monterey Jack 1 small red onion, thinly sliced, quartered 8 slices bacon, crisply cooked Grated orange peel, if desired In a small bowl, combine dressing ingredients, blend well. Peel and slice avocado into a small bowl, sprinkle with orange juice. In the bottom of a 13 X 9 inch baking dish, layer 2 cups lettuce, avocado slices, oranges, 2 cups lettuce, turkey, 2 cups lettuce, cheese, onion and remaining 2 cups lettuce. Spoon and spread dressing evenly over lettuce. Crumble bacon over top. Sprinkle with orange peel. Store in the refrigerator and serve within 4 hours. Makes 8-12 servings.
