=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 01-14-94 (12:23) Number: 361 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: Twice Cooked Pork Conf: (37) Home Cooki --------------------------------------------------------------------------- Twice Cooked Pork 1 lb. pork butt or shoulder (2/3 lean and 1/3 fat) 1 green onion 1 slice fresh ginger root 1 t. rice wine or dry sherry Seasoning Sauce: 1 1/2 t. rice wine or dry sherry 1 T. sweet bean sauce 1 T. hot bean sauce 2 T. soy sauce 1 t. sugar 1/4 c. vegetable oil Other Ingredients: 3 T. vegetable oil 3 garlic cloves, sliced 1 green pepper, cut in 1 1/2 inch squares 3 cabbage leaves, cut in 1 1/2 inch squares 1 T. vegetable oil Place pork in a large saucepan, add water to cover. Add green onion, gingerroot and wine. Bring to a boil over high heat. REduce heat to medium and cook 30 minutes. Remove pork from cooking liquid and place on a platter to cool. Mix ingredients for seasoning sauce in a small bowl, set aside. Cut cooled pork into thin slices. Heat 3 Tablespoons oil in a wok over high heat 30 seconds. stir fry pork slices 1 minute. Add garlic, green pepper and cabbage. stir fry 1 minute. Remove pork and vegetables with a slotted spoon, draining well over wok, set aside. Heat 1 Tbsp. oil in wok over medium heat 30 seconds. Add seasoning sauce. Stir fry 10 seconds. Return pork and vegetables to wok and mix well with sauce. Serve hot. Makes 4 servings.
