Remove and set aside. Drain off all but 1 to 2 tbsp. drippings. Add potatoes and cook until tender, stirring often. Return sausage to skillet. Pour eggs over potatoes and sausage. Cook eggs to desired doneness. Heat tortillas according to package directions. Spoon potato mixture evenly down center of each tortilla, top with the picante sauce.
