=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 01-08-94 (23:34) Number: 381 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: Wonder Woman's Chili Conf: (37) Home Cooki --------------------------------------------------------------------------- WONDER WOMAN'S CHILI 1 lb. hot sausage 1 lb. lean ground chuck 6 slices bacon 1 large onion, chopped 1 bell pepper, chopped 2 cloves minced garlic Creole seasoning to taste 1 jalapeno pepper, diced 1/4 c. worcestershire sauce 1 c. Burgundy wine 1 t. dry mustard 1 t. celery seeds 2 T. chili powder 3 c. Italian tomatoes 15 oz. can pinto beans 2-15 oz. cans kidney beans Brown bacon in a large Dutch oven. Remove bacon and crumble. Set aside. Slice sausage into 1 inch pieces and fry in bacon fat until browned. Remove and set aside with bacon. Pour off excess fat and fry ground beef. Drain and set aside with other meats. Pour off excess fat from the pot and cook onion, bell pepper, garlic and jalapeno over low heat for 3 minutes. Stir in mustard, celery seeds, chili powder and simmer 10 minutes. Mash tomatoes, add with liquid and meats to onion mixture and heat to boiling. Reduce heat and simmer. Season to taste with Creole Seasoning. Simmer for 1/2 hour, stirring occasionally. Add beans with liquid, heat to boiling. Reduce heat and simmer for 1 hour, stirring occasionally. Serves 8.
