=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 01-14-94 (11:52) Number: 324 From: KOUNTRY COOK #1 @1912232* Refer#: NONE To: ALL Recvd: NO Subj: My Yummy Monterey Jack Ch Conf: (37) Home Cooki --------------------------------------------------------------------------- YUMMY MONTEREY JACK CHICKEN AND RICE This is one of my favorite ways of fixing chicken and every person who has tried it....wants the recipe! 12 boneless, skinless, chicken breasts 2 pkg. taco seasoning mix 2 cups flour 2 sticks butter 1 large bag Doritos Nacho Flavor Chips, crushed 2 jars Picante Sauce, Thick & Chunky style, medium heat 1 jar Picante Sauce, Thick & Chunky style, Mild heat 2 cups Monterey Jack, shredded Sour cream for topping Guacamole for topping Hot cooked rice Extra Monterey Jack, if desired, shredded In a bowl, mix well the taco seasoning and the flour. In another bowl, melt the butter. In another bowl, crush the bag of Dorito chips. Rinse the chicken in cold water, dip a breast into the flour, then butter, then chips. Put into a 13 by 9 inch baking pan that has been sprayed with Pam. Repeat with rest of chicken and bake at 375 degrees for 45 minutes. Remove from oven, pour picante sauce around the sides of the chicken. Sprinkle cheese on top of chicken and return to the oven for 25 minutes. To serve: Layer white rice, chicken breast (1 or 2), picante sauce, extra Jack, sour cream and guacamole on individual plates for serving. We love this stuff. Kids like chicken cooked this way alone too. Really good!
