=========================================================================== BBS: The GWE BBS [ASV/CIN] Date: 08-24-94 (17:31) Number: 422 From: R2D2 #3 @1614017*1 Refer#: NONE To: ALL Recvd: NO Subj: Chinese Recipe 8 Conf: (37) Home Cooki --------------------------------------------------------------------------- ---------- Recipe via Meal-Master (tm) v8.00 Title: Beef With Broccoli In Oyster Sauce Categories: Chinese, Soo hoo's, Beef, Chicken, Oriental Yield: 4 servings 1 lb Broccoli; fresh, bite size 1 c Onions; sliced, optional 3/4 lb Flank steak; sliced thin 1 ts Ginger root; minced 1/4 c Dried Cloud Ears; soaked 1 ts Garlic; minced 1/2 c Water chestnuts; sliced 1 tb Rice wine -or bamboo shoots 3/4 c Stock --------------------------MARINATE MEAT 20 MINUTES-------------------------- 1 tb Thin soy 2 ts Cornstarch 1 ts Rice wine 2 ts Oil 1 ts Sugar ---------------------------------SEASONINGS--------------------------------- 1 tb Cornstarch; dissolved in 3 tb Oyster sauce 1 tb -cold water 1 ts Sugar 1 tb Thin soy 1 ts Sesame oil Marinate meat. Set wok over high heat until hot. Add 2 tablespoons oil. Add beef. Stir fry for 2 minutes or until it shows no pink. Remove and set aside. Heat wok. Add 2 tablespoons oil. Add ginger, garlic and the vegetables. Stir fry for 1 minute. Sprinkle rice wine. Pour in stock. Cover and cook for 3-4 minutes. Add beef and all the remaining seasoning mixture. Mix well until thickened. NOTE: For more sauce; double the stock and oyster sauce.
