MMMMM----- Recipe via Meal-Master (tm) v8.02 Title: Spinach-and onion Bread Categories: breads Yield: 1 servings 2 Onions, chopped 2 Tb olive or vegetable oil 3 c buttermilk baking mix 3/4 c milk 1 egg, lightly beaten 1 bag (10 oz.) fresh spinach, -rinsed and chopped Preheat oven to 350'F. Coat 8" round baking pan with nonstick cooking spray; set aside. In large skillet saute onions in oil 5 minutes until very tender; set aside. In large bowl with wooden spoon stir together buttermilk baking mix, milk, egg, spinach and onion until well combined. Spoon into prepared pan. Bake 45-55 minutes until wooden pick inserted in center comes out clean and top is golden brown. cool in pan on wire rack 10 minutes. Serve warm or invert onto rack and cool completely.
