MMMMM----- Recipe via Meal-Master (tm) v8.02 Title: Divinity Categories: candies Yield: 1 servings 3 c sugar (white or light brown) 1/2 c white corn syrup 1/4 ts salt 2/3 c warm water 2 egg whites 1 ts vanilla (or other flavoring) 1 c chopped nuts (optional) Utnesils needed: Suacepan, Candy Thermometer, Electric mixer, 9-inch-square pan, greased Setting time: 2 hours Quantity: About 1 3/4 pounds Storing: Layers in tightly covered container for 1 week Place sugar, syrup, salt and water in saucepan over medium heat. Cook stirring constantly, until sugar dissolves. Continue cooking, without stirring, until mixture reaches the firm-ball stage (248 degrees on candy thermometer). Stiffly beat the egg whites. Very slowly, pour about half the syrup mixture over them, mixing constantly. Continue cooking the other half of the syrup mixture until it reaches the soft-crack stage (270 degrees on candy theremometer). Add it slowly to the egg white/syrup mixture. Beat until it is thick and creamy and holds its shape. Add flavoring and nuts (if desired). Spread in prepared pan or drop by the teaspoonful onto waxed paper. If placed in pan, let set at least 2 hours before cutting into squares. NOTE: If desired, you can add 1/2 cup chocolate bits or 1/2 cup candied fruit to this recipe in place of the nuts.
