MMMMM----- Recipe via Meal-Master (tm) v8.02 Title: Lentil Rissoles Categories: none Yield: 6 servings 1/2 c brown or yellow lentils 1 lg onion, grated 2 md boiled potatoes 1 c soft wholemeal breadcrumbs 1/2 c chopped almonds 1/4 c sesame seeds sea salt 2 1/2 tb chopped parsley 1 egg Cooking time: 15-20 minutes Oven Temp: 350-375 degrees Bring lentils to the boil in a saucepan of cold, salted water. Cover and simmer until they are tender. When cooked, drain and mash the lentils and mix them with the grated onion, mashed potato, breadcrumbs, nuts, sesame seeds, salt, parsley, lightly beaten egg and enough cold water to bind the mixture together. Form into twelve croquettes, place on a greased baking tray and bake for 25 minutes. You may want to prepare them ahead of time and then fry them gently in oil for 15 minutes, turning once.
