Saute minced garlic in olive oil 1 minute. Add mushrooms and lemon juice; cook over medium heat until liquid has evaporated, about 10 minutes. Slice bread into 1/2-inch thick slices; toast bread. Rub toast with remaining 1 clove garlic. Top each bread slice with mushroom mixture and sprinkle with parsley. Serves 8 as an appetizer; 4 as an entree.
